Oh man. I cannot believe I have passed these by in the store so many times. They are kind of strange looking and always caught my eye, but I had no idea what to do with them. Do you peel them? Do you cook them? Do you slice them and put them on a sandwich? I didn't know, and to be honest I was intimidated by these little green guys. One day when they were on sale, I got brave and scooped some up. Then I went home and googled : How do you cook a tomatillo?
I was relieved to find that they are used primarily in Mexican cuisine (I used my superb knowledge of the Spanish language to deduce as much while in the store). This was good news for me because Mexican food is usually very allergen friendly, and not too difficult for me -admittedly a culinary novice, to make.
The first recipe I made was salsa with roasted tomatillos, onion, and garlic. Very similar to the recipe found here: Chef Rick Bayless- Roasted Tomatillo Salsa
It was so good!! After the chicken burritos I made to go with it were all gone, Ian and I were literally trying to find things to put the rest of the salsa on. I ended up just eating it with a spoon. Healthy and so yummy.
My second tomatillo adventure was inspired by this recipe I found on Pinterest: Chicken tomatillo chili - Country Living
I didn't have all of the ingredients, but that didn't stop me from trying! I am not one-hundred percent sure what happened, but my chili got thick and resembled more of a stew. So I made some white rice, and poured it on top. It was really good. My entire family gobbled it up. I wish I had a picture of my 2 year old literally licking the bowl clean.
So, I am writing this to encourage you, if you are anything like me and stay away from unfamiliar fruits and veggies, do what I did! Pick up something that looks interesting, and google it when you get home. After 2/2 successful recipes, my love for the tomatillo continues to grow! Pick something new, make something new, and let me know how it turned out!
